Strawberry Pizza

Bake 1 package of cookie dough on pizza pan for crust.

Mixture:

8 oz. cream cheese
1 cup of sour cream
1 cup of powdered sugar

Topping:

Fresh Strawberries, Cut in half
Strawberry Glaze
Whipped Cream Topping

Directions:

Roll dough flat on pizza pan and bake.  This provides the crust for your pizza.
Whip together cream cheese, sour cream, and powdered sugar.
Spread this mixture on top of crust.

Arrange strawberries, cut in half, on top of mixture.

Drizzle with strawberry glaze and top with whipped cream.






Strawberry Jelly Roll

Ingredients:

Batter:
3 Large Eggs
1 Cup Sugar
1 Cup Self-Rising Flour
1/3 Cup Water
1 Teaspoon Vanilla Extract

*Powdered Sugar*

Mixture:
2/3 Cup Sugar
2 Tablespoon Cornstarch
2 Tablespoons Strawberry flavored gelatin
2/3 Cup Water

*Fresh Strawberries*, 2 cups, sliced or chopped

Mixture:
3 oz. Cream Cheese
1 1/4 Cup Sifted Powdered Sugar

Grease Jelly Roll pan, line with wax paper.  Grease and flour pan and set aside.

Beat eggs until foamy.  Gradually add sugar until thick and lemon colored.  Fold in flour, water, and vanilla into egg mixture.

Spread batter into greased and floured Jelly Roll Pan and bake at 350 for 10 to 12 minutes.

Sift powdered sugar onto linen towel.  After cake has baked, loosen from pan and turn out onto powdered sugar.  Peel off wax paper.  Roll up cake and towel until completely cooled.

Combine 2/3 cup sugar, cornstarch, gelatin, and water in saucepan.  Cook over medium heat until thick, about 5 minutes.  Cool completely and then stir in chopped strawberries.

Beat cream cheese until fluffy and gradually add powdered sugar until mixture is smooth.

Unroll cake.  Remove towel.  Spread cream cheese mixture onto cake and then strawberry mixture.  Re-Roll Cake.

Chill until serving time.


 



Chocolate Strawberry Shortcake

Filling (In between cake layers)
1 quart strawberries (cut in half or chopped)
2 tablespoons sugar
1 teaspoon vanilla

Cake
2 - 9 inch layers chocolate cake (we use Duncan Hines Chocolate cake Mix)

Glaze
3 squares Baker's semi-sweet chocolate
3 Tablespoons Water
1 Tablespoon Margarine or Butter
I Cup Powdered Sugar
1/2 Teaspoon Vanilla

Garnish
8 oz. Cool Whip
Whole Strawberries (Chocolate Dipped Strawberries are better)


Directions:

Bake chocolate cakes according to package directions.

Prepare glaze:
Microwave chocolate, water, and margarine on HIGH 1 or 2 minutes or until chocolate is almost melted.  Stir glaze until rest of chocolate melts.  You will burn the mix if you microwave it too long.  When chocolate has melted, stir in sugar and vanilla just until mixture is smooth.  You are ready to top your cake.

Cut up fresh strawberries and mix with 2 tablespoons sugar and 1 tespoon vanilla.  Spoon 1/2 of strawberry mixture on top of one cake layer.  Drizzle with 1/2 chocolate glaze.  Top with 1/2 Cool Whip.  Repeat instructions for second layer.  Garnish with strawberries and refrigerate.
